Cocoa powder is essentially used as flavor in biscuits, ice cream, dairy drinks and cakes. Apart form that it is also used in the manufacture of coatings for confectioners or frozen desserts. Cocoa powder is also consumed by the beverage industry for example for the preparation of chocolate milk.

FACTS THAT WE SHOULD KNOW ABOUT

Alkalized cocoa powder has a higher pH level due to an alkali solution being added to the beans, nibs or powder. This reduces the acidity and darkens the colour, ranging from a deep reddish brown to nearly black.

The level of acidity and colour will vary depending on the level of alkalization. The acidity affects the flavor, the way it interacts with other ingredients, and its solubility.

Cocoa powder tastes like chocolate, but without the creamy mouthfeel cocoa butter adds to bar chocolate.

Cocoa powder stores for up to two years in an airtight container in a cool, dark, dry place. Texture spoilage can be happen due to storing the cocoa powder in refrigerator or freezer.

COCOA POWDER AND ITS ORIGIN

The residues found and the kind of vessel they were found in indicate that the initial use of cacao was not simply as a beverage, but the white pulp around the cacao beans was likely used as a source of fermentable sugars for an alcoholic drink. The Maya civilization grew cacao trees in their backyard, and used the cacao seeds it produced to make a frothy, bitter drink. Documents in Maya hieroglyphs stated that chocolate was used for ceremonial purposes, in addition to everyday life. The chocolate residue found in an early ancient Maya pot in Río Azul, Guatemala, suggests that Maya were drinking chocolate around 400 AD. In the New World, chocolate was consumed in a bitter, spicy drink called xocoatl, and was often flavored with vanilla, chili pepper, and achiote (known today as annatto). Chocolate was also an important luxury good throughout pre-Columbian Mesoamerica, and cacao beans were often used as currency.

There are two types of cocoa powder available in 25kg kraft bags namely Alkalised and Natural. Each type is also available with different fat content and color.

We also have pure, prime pressed cocoa butter in namely 25kg cartons packing. When processing beans, grinders get butter and cake, which is later pressed into powder. Butter is a key ingredient of chocolates and now being popularly used in pharmaceutical industry while powder is used for coatings in chocolate-making, bakeries and ice cream. Shelf life for our powder can last up to 2 years whereas our butter can be kept apx for two years (stored under ideal conditions).
